Wassailing is an old English tradition of blessing the trees and encouraging the new crop. The celebration began with a toast to the trees with cider and reading of poems written for the occasion. Celebrants dipped bread into a bowl of cider and hung these 'toasts' on the trees as an offering to the birds.
